Some tricks I discovered by accident (OS 4.1, 4th generation touch):

voice control
Press and hold the home button
for voice control

background apps
Press home twice to get
list of apps running in background.
Slide left and right to see the list.

quitbackground
Press and hold an app icon,
they change to the minus sign and wiggle.
Touch the minus sign to stop
the background process. The app icon will
disappear when it has quit.

While you have this screen up....
slide the apps off the right and you can
lock your screen in Portrait mode.

lock    locked
The lock/circle icon toggles Portrait Orientation lock.
The music icons do what we expect them to do.
